Today I am writing about an Italian recipe typical from the north. It basically uses rice,
cheeses and white wine. It is really easy to make and is extremely useful when
you need to cook for someone else and you want to give a good image.
The ingredients for 4 people are:

500 grams
of risotto rice

70 grams
of butter
·
1
garlic
· 1.75 litres
of vegetable soup (you can use an already prepared one, for example from
Gallina Blanca; or make one by your own using the vegetables that you like).
Otherwise using just water also works.

90 grams
of grated Parmesan cheese
·
90 grams
of Gorgonzola cheese
·
90 grams
of Taleggio cheese
· 90 grams of Fontina cheese
·
0.5 litres
of white wine
·
Salt
·
Pepper
·
Parsley
If you can’t find all the cheeses
written above you could use other Italian dry cheeses such as Pecorino Romano,
Grana Padano… Or use just one, two or three chesses. However, it is important
to reach 360 grams of cheeses (or even more if you are a cheese lover like me).
With
regard to the wine, it has to be a white dry wine and it mustn’t be fruity. Alternatively,
you can use dry vermouth. For this kind of risotto I recommend to drink, for
instance, Italian wines like a
Verdicchio, a Pinot Grigio or a Pinot Bianco or the rest of the whine that you
have used to cook the risotto (why waste whine if it is open?). If you don’t like
white wine, alternatively, use any red one. All wines taste good after cheese.
These wines are Italian and match perfect with a 4 cheeses risotto.
First, boil the rice with water or
the soup. Then, in another pot rub the garlic trough the bottom and mix the
butter, the cheeses with the exception of the Parmisan and the wine. Add salt
and pepper to the mix according to your taste. After that, boil all these mix
with low fire. Having had all the cheeses melted, mix the rice and the grated
Parmisan. Finally, add parsley as a decoration.
As a desert, continuing with the
Italian meal you could have Tiramisu (it may not be the best combination
because of the high content of cheese, but anyway for one day is ok!), which is
typical from Veneto, or Panna cotta. And finally why don’t you take a shot of grappa?
